Saba(mackerel) is popular ingredient and easy to buy every supermarket most of everyday.
Mackerel simmered in shoyu(soy sauce) is typical home made cooking.


  Ingredients (for 2 people)  : prep:15mins , total 35mins  


Mackerel simmered in shoyu(soy sauce) 
☆2  mackerel
☆thumbnail sized piece of fresh ginger   finely sliced

sauce
☆2tbsp shoyu(Japanese soy sauce)
☆2tbsp cooking sake(or dry sherry)
☆1tbsp mirin(or honey)
☆2tbsp sugar
☆1cup/200ml water


directions


1. prepare the mackerel by removing the head,tail and belly section,and cutting in 2.



2.Leave the mackerel aside and mix all ingredients in a saucepan,and put on low heat until simmereing.



3.Add mackerel to liquid skin side up and cover.



4.Stirring occasionally until liquid has reduced by half.

Turn off heat let rest for 5mins.


serve with rice and miso soup

Most Japanese home cooking uses mirin(sweet-sake), sake(cooking-sake) and shoyu(soy-sauce).
If you can't find them in your local supermarket Japanese food shops are sure to have these and other Japanese ingredients,so please check the internet for your nearest store!!!
