Children and ladies especially like omu-rice.Recently restaurants which specialize in omu-rice have become popular,offering several different kinds of rice filling and topped with a variety of sauce,such as tomato,curry,white sauce,shoyu (soy sauce)and gravy etc.
It's easy to cook but there's a knack to it.
Today I will show you the original standard version.
Ingredients (for 2 people) : prep:10mins , total 40mins
Ketchup omu-rice
☆1/2 onion finely chopped
☆1/2 carrot finely chopped
☆1 green pepper finely chopped
☆80g chicken thigh (sausage,ham,bacon can be used)
☆3 eggs
☆a pinch of pepper and salt
☆4-6 cups of cooked rice
☆ketchap to taste
*Today I ran out of chicken thigh so I used sausage instead.
<directions>
We need 2pans,one for the fried rice and one for the omelette.
(flat pan)
In a lightly-oiled pan on high heat.
Stir fry finely chopped vegetables and chicken(or sausage,bacon etc).

Add rice and ketchup and mix well.
(wok)
Pour lightly-beaten eggs into a lightly oiled wok on low heat.
Turn the pan spreading the eggs thinly.
Put the fried rice in to the middle of omelette.
But it's important to keep the rice piled up rather than flattened.Leaving as much omelette as possible untouched by the rice.
When the eggs are cooked,they will loosen from the pan when shaken.
At this stage,by deftly shaking and flapping the pan you need to encase the rice with the omelette and turn it onto a plate.
This is the tricky bit which can only be learnt by practice!!!
